Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 egg
- 2 tablespoons melted butter
- Chocolate chips for teddy bear eyes and nose
- Sliced bananas for teddy bear ears and snout
- Maple syrup for serving
- Whipped cream optional
- Fresh berries optional, for garnish
Instructions:
Mix the sugar, baking powder, baking soda, and salt in a bowl with a whisk
Beat the egg in a different bowl, then add the buttermilk and melted butter
Combine well
Add the wet ingredients to the dry ones and mix them together just until they are mixed
Watch out not to mix too much; it's okay to have some lumps
Put a nonstick griddle or pan on medium heat and use cooking spray or butter to lightly coat it
Put a small circle of batter on the griddle for the bear's head on each teddy bear pancake
Make two small dots in the batter to look like eyes and one slightly bigger dot to look like a nose
For the eyes, use chocolate chips
Put two slices of banana on top of the head to make the ears and a bigger slice on the bottom to make the nose
Once the pancake starts to bubble on top, flip it over and cook the other side until it's golden brown
Do this again and again until you have all the teddy bear pancakes you want
You can serve teddy bear pancakes with maple syrup and add whipped cream and fresh berries on top if you want to
