Cream Cheese Lemonade Blackberry Crepes



With these Cream Cheese Lemonade Blackberry Crepes, you can enjoy the perfect mix of sweet and sour tastes. The fresh blackberries and tangy cream cheese filling go very well together inside the thin crepes.

Ingredients:

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • 8 ounces cream cheese
  • 1/4 cup powdered sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 cup blackberries
  • Powdered sugar for dusting

Instructions:

Whisk the flour, eggs, milk, water, salt, and melted butter together in a bowl until a smooth batter forms

Put the nonstick skillet on medium heat and use cooking spray or butter to lightly coat it

Pour 1/4 cup of batter into the pan and swirl it around to cover the bottom evenly

When the bottom is golden brown and the edges start to lift, it's done cooking

Turn over and cook for one to two more minutes

Do it again with the rest of the batter

Mix powdered sugar, lemon zest, and lemon juice with cream cheese in a different bowl until the mixture is smooth and creamy

Put some of the cream cheese mixture on top of each crepe

Bring the crepes together and roll them up

Before you serve, sprinkle with powdered sugar
