Vegan Reese's Pieces Butterfinger Cookies



You can enjoy the rich flavors of Reese's Pieces and Butterfinger in these tasty vegan cookies. Everyone will enjoy these cookies, vegans and non-vegans alike. They are chewy in the middle and crispy on the edges.

Ingredients:

  • 1 cup vegan butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vegan Reese's Pieces
  • 1 cup vegan Butterfinger chunks

Instructions:

Preheat your oven to 350F 175C and line a baking sheet with parchment paper

In a large mixing bowl, cream together vegan butter, brown sugar, and granulated sugar until light and fluffy

Add applesauce and vanilla extract, and mix until well combined

In a separate bowl, whisk together flour, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms

Fold in vegan Reese's Pieces and Butterfinger chunks until evenly distributed throughout the dough

Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them a few inches apart

Bake for 10-12 minutes, or until the edges are golden brown

Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
