For people who are vegan, grain-free, or sugar-free, these low-carb peanut flour chocolate chip cookies are a great treat. They're satisfying and taste great, with just the right amount of sweetness from the sugar-free chocolate chips and erythritol.
Ingredients:
- 1 cup peanut flour
- 1/4 cup sugar-free chocolate chips
- 1/4 cup unsweetened almond milk
- 1/4 cup erythritol or preferred sweetener
- 1/4 teaspoon baking soda
- Pinch of salt
- 1 tablespoon coconut oil
Instructions:
Warm the oven up to 175F 350C
Put erythritol, baking soda, salt, and peanut flour in a bowl and mix them together
Mix in the coconut oil and almond milk until a dough forms
Add the chocolate chips and mix them in
Make little balls out of the dough and put them on a baking sheet that has parchment paper on it
With a fork or your fingers, make each ball a little flatter
Put it in the oven for 10 to 12 minutes, or until the edges turn golden brown
Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way
