Keto Citrus Cheesecake Bites



These Keto Citrus Cheesecake Bites are a great way to satisfy your sweet tooth while staying on a low-carb diet. They are sure to be a hit at any party because they have a crunchy almond flour crust and a creamy cheesecake filling with citrus flavors.

Ingredients:

  • 1 cup almond flour
  • 4 tbsp butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup powdered erythritol
  • 1 egg
  • 1 tsp vanilla extract
  • 1 lemon, zest and juice
  • 1 lime, zest and juice
  • 1/4 cup heavy cream
  • 1 tbsp powdered erythritol for topping

Instructions:

Warm the oven up to 325F 160C

Melted butter and almond flour should be mixed together in a bowl

A mini muffin tin needs to have a crust on the bottom

Press the mixture into it

Cream cheese and erythritol should be mixed in a different bowl until they are smooth

Citrus zest, lime zest, lemon juice, and lime juice should all be added

Mix everything together well

Cover the crusts in the muffin tin with the cheesecake mix

Bake for 15 to 20 minutes, or until it's set

Let it cool down

Mix powdered erythritol with heavy cream in a small bowl

Whip the mixture until stiff peaks form

On top of each cheesecake bite, pipe or dollop whipped cream

Put it in the fridge for at least an hour before you serve it
