A hearty and healthy soup made with vegetables and beans from the farmers market that is great for cold winter days.
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 medium sweet potato, peeled and diced
- 1 cup diced tomatoes
- 4 cups vegetable broth
- 1 cup cooked white beans
- 2 cups chopped kale
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat
Add diced onion and minced garlic, saut until fragrant
Add chopped carrots, celery, and sweet potato, cook for 5 minutes
Stir in diced tomatoes, vegetable broth, and cooked white beans
Season with dried thyme, salt, and pepper
Simmer for 20 minutes or until vegetables are tender
Add chopped kale, cook for an additional 5 minutes
Taste and adjust seasoning if needed
Serve hot and enjoy!
